1. Use dots to change your email-address.
A random dot somewhere in your mail-address doesn't change anything. myaddress@gmail.com is the same as my.address@gmail.com You can put in as many dots anywhere you like. This way, you can register on some sites with a new email without ever getting another email.
2. +whatever at the end of your email-address is ignored.
This is a very nice feature, that allows you to see which companies sell your information. Let's say your email-address is imgurian@gmail.com, and you register on some shady company with the address imgurian+shadycompany@gmail.com. Now, all mails sent to this address will come into your usual mailbox, and you can see in the "recipient"-field what address it was sent to. After a few weeks, you suddenly receive a mail from another shady company, but sent to the address that you used to register at the first shady company. Then you know that they have sold your information.
(All of this means that you can create multiple accounts with the same email on something... like if you want infinite free trials on a certain website ;)
